German Potato Salad

 Water not boiling yet boil potatoes w/ skins (same size)

If not, big bottom small on the top take small out 25 big out in 40

Boil add salt

Let cool till warm

Peal and slice when warm

Cut bacon into 16th

Make bacon while potatoes are cooling

But bacon on paper towel

Poor off some fat if too much

Save some bacon on the side

Grate an onion 2tbs of grated onion (add if more needed)

Put bacon and some fat onto potatoes grate add onion

LEAVE PAN DO NOT WASH!

¾ cup of vinegar to pan turn heat on

Fill ¾ cup of water (leave on sink)

2 tbs of sugar

 Pepper on potatoes 5 shakes of pepper

1tbs of salt to frying pan

Poor on ½ cup of water

Stir while simmering

Taste if too vinegary add rest of water

Every thing dissolved

Poor on potatoes

Stir with big spoon

Taste for amounts of salt (if enough)

KEEP WARM serve at room tempters

Clippinger Cole Slaw

Nanna’s Cole Slaw

1 head of cabbage sliced as thin as you can and salt as you go in big pot – must have room to stir

2 tablespoons of grated onion – careful of too much onion, you can add more later

1 medium green pepper diced fine

2 cups at least of diced celery sliced thin leaves are good

1 cup of grated carrot

½ cup of mayo (you can add more if needed)

1-2 tablespoons Heinz brown vinegar

1 teaspoon sugar

Black pepper to taste

½  teaspoon celery seed

Mashed Potatoes

“Never insult the potatoes with cold milk,” Anne Busche

I 5 pound bag of Yukon gold potatoes, peeled and quartered. Same size pieces is best. Cover in iced salt water for at least 20 minutes. Drain and use fresh water to cook. Cook until tender, a fork or knife goes in easy.

1/2 a stick, or more of softened butter

1 1/2 cups of milk (warmed, so as not to insult the potatoes)

Garlic powder (just a bit)

Salt & Pepper

Cut butter into the hot potatoes after you drain them. Mash until there are no large pieces, then slowly mash in adding WARM milk. Sprinkle a little garlic powder, and salt and pepper towards the end of the milk adding process. If you need more milk, you have to heat it up. I’m not kidding. No cold milk. Mash until you are satisfied with the consistency of your taters, precious. They can go in the oven with a pat of butter on top. Can’t hurt.

Caesar Salad (Incomplete)

Romain – 2 heads (washed and TORN, not cut)

The juice of 2 lemons

Garlic (2 cloves, crushed)

Heavy sprinkle of coarse salt

3 anchovies (mashed with fork into the salt and lemon juice)

Worcestershire sauce

Dijon mustard

Oil

Locatelli cheese (grated)

Fresh cracked pepper

Nanna’s Relish Salad

Anne Busche

6 stalks of celery hearts including the leaves (finely chopped)

1 medium to large onion (finely chopped)

2 large ripe tomatoes (coarsely chopped)

1/2 cup of brown vinegar

2/3 cup of water

1 teaspoon sugar

Salt and pepper to taste

Mix together with liquid and let stand for one hour.
